Noooo not back to school yet! While I don't want summer to end the fact is that it's August and time is flying by! We're gong to enjoy what's left of our gorgeous summer but we have to face reality, back to school is coming. It's time start thinking preparations, school supplies, new clothes for the kids and all that fun stuff. To make things easier for those hectic times we like to have some delicious meals that are a breeze to put together like these easy chicken fajitas!

What I love about these easy chicken fajitas that you can also customize them to everyone's taste. Each family member can add whatever toppings they want. Don't like onions (like me) don't add them. Want extra veggies go right ahead. We usually stuff it with grilled chicken or any leftover chicken we might have. I'm not showing these ones as completely stuffed as I want you to imagine your own toppings.

Aboveis the start of these easy chicken fajitas. We've just added the chicken and veggies so far. My daughter does not like salsa or sour cream (Weird I know) so she would just add more cheese to this one and she would be good to go. That's okay like we said, easy and made to order, well they can put their own fajitas together, if the younger kids with some supervision for the hot foods.

Ingredients

  • 2 chicken breasts
  • 1 table spoon of olive oil
  • ½ lime
  • pinch of salt
  • pinch of pepper
  • 2 peppers
  • tomatoes
  • cheddar cheese
  • sour cream (optional)
  • salsa (optional)
  • pinch of salt
  • pinch of pepper
  • 1 table spoon olive oil

Instructions

  1. Fire up your grill to a medium heat.
  2. Add your chicken breast into a bowl and combine the olive oil, salt, pepper, lime. Mix up well.
  3. Place the chicken on your grill and let it cook for about 5 minutes on each side or until the chicken is fully cooked through depending on your grill temperature and chicken breast thickness.
  4. In a frying pan add your peppers sliced up, olive oil, salt, pepper. Have it on a medium/high heat and move the peppers around every few seconds.
  5. Once the peppers are cooked turn off heat and let them cool.
  6. Once the chicken is done let it cool for a few minutes.
  7. Cut the chicken into thin slices.
  8. Grab your tortillas and add in your chicken, peppers, tomato and whatever else you want in it

Notes

You can whatever toppings you like, we''ve just suggested some of our favourites. Feel free to add more than what we've shown, we usually stuff ours quite full but we adjusted this for our photos so you could see what was in it.
Instead of sour cream you can use your favourite salad dressing.
