- To begin, you can either thinly slice the cucumbers or spiralize them. If you wish to spiralize, trim the ends of the cucumber. Spiralize the cucumbers or use a mandolin to thinly slice.If not, trim the ends of the cucumber and thinly slice.
- Add to a large mixing bowl. Toss with the carrots, sliced bell peppers, and green onions.
- To make thePeanut Chili Vinaigrette: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame chile oil, honey, water, lime, garlic, red pepper flakes, and black pepper.
- To serve, drizzle salad with the dressing and garnish with chopped peanuts.

If you wish to make this ahead of time, I would suggest storing the cucumber noodles and remaining ingredients separate as the cucumber noodles can get soggy. My suggestion, prepare the other ingredients, then spiralize or thinly slice the cucumber as close to consuming as possible for the best texture.

how far in advance can I make the cucumber noodles?
I highly suggest a crisp, extremely fresh Englishcucumber as regular cucumbers can get quite soft. And try not to spiralize the cucumber too far in advance as they can get soggy. I love to chop all the other ingredients and store in an air tight container. Then, spiralize or slice the cucumbers and keep them in a separate container. Then, combine when its meal time, drizzle with the dressing and a good sprinkle of crushed peanuts.

Ingredients
- Salad:
- 4 large English Cucumbers
- 1 cup Julienned carrots
- 2 bell peppers (1 red, 1 yellow), thinly sliced
- 1/4 cup chopped cilantro
- 4 green onions, thinly sliced
- Garnish, 1/3 cup roasted peanuts, chopped
- Peanut Chili Vinaigrette:
- 1 heaping tablespoons peanut butter
- 3 tablespoons low sodium soy sauce (Tamari Gluten Free Sauce, if needed)
- 2 teaspoons rice vinegar
- 1/4 teaspoons sesame chile oil
- 1 tablespoons honey
- 2 tablespoons water
- juice of 1 lime
- 1 garlic clove, minced
- 1/2 teaspoon red pepper flakes
- Pinch ground black pepper
Instructions
- Salad: To begin, you can either thinly slice the cucumbers or spiralize them. If you wish to spiralize, trim the ends of the cucumber. Spiralize the cucumbers or use a mandolin to thinly slice.
- Toss with the carrots, sliced bell peppers and green onions.

*This is the spiralizer I use and love!*If you wish to not spiralize the cucumbers, just thinly slice.

As if I wasn't already convinced that I need to get artificial lighting! These photos look great. I was going to wait until fall/winter when it starts getting dark earlier, but I do think they'd help with schedule flexibility for sure.

Lighting is always a struggle! I have to plan my whole day around when the lighting is best in my house to take photos. Yours look really good. If you hadn't said so, I would have never known they were taken in artificial light!

I am SUPER impressed with these photos, I would never have guessed that you used artificial lights! I have tried my lights so many times and can just not get them to look this good. So for now, I'm still a slave to the morning light :( :( This salad looks amazing...all of my favorite flavors packed into one salad!

I love these photos and all of your photos for that matter!! I had to start using artificial lighting a couple months ago because I couldn't ever find the right time of day to get a decent photo. It was driving me and my family crazy!!! I too never know how much to share on the blog and sometimes I really dread the writing part!!! I love cucumbers and I would never thought to use them in a salad like this!! Great Job!!!

I can't believe these pictures were taken with artificial light, they are so beautiful! You have quite a talent, I have never been able to make artificial light work for myself. I struggle with the same thing. I don't usually share much personal info but the odd time I do, I find I do get more engagement and traffic on those posts. It find it odd sharing personal stories when I'm posting a recipe though and I don't think I've ever really figured out the balance, especially when you're also trying to write for SEO. I'll have to head over and read the post you were talking about. I think the photos look awesome for artificial light, I wouldn't even have guessed it.
