Alternatively, you can grate up your frozen stick of butter ahead of time and then keep the frozen shreds in the freezer so that the recipe is even quicker to make when you’re ready to make an easy cake.
Easy Fruit co*cktail Cake Recipe
Ingredients:
1 White Cake Mix 1 15 oz. can Fruit co*cktail ¼ cup 7-up or Sprite soda (or any lemon lime type soda will do) 1/2 cup Butter, frozen and grated
Mix the cake mix, the (undrained) can of fruit co*cktail and sprite together. Combine well.
Add the grated butter and mix until incorporated.
Put the batter into a greased spring form pan. After filling the pan, place it on a baking sheet in the oven in case some of the batter leaks. Bake for 45 – 50 minutes or until a toothpick comes out clean.

For a light, airy cake, swap out whole eggs for egg whites. Use two egg whites for every egg called for on the box. Combine the cake mix with the ingredients aside from the eggs. Whip the egg whites separately until medium peaks form, then gently fold them into the batter.

Fat: Butter, oil, or a combination of both can help make a cake moist. Oil tends to make cakes moister than butter. Eggs: They provide structure and moisture. Some recipes might call for separating the yolks and whites and beating the whites to stiff peaks for added fluffiness.
Most cakes will call for a leavening agent like baking powder or baking soda. These create the bubbles you need for the cake to rise. If the flour you use is self-raising, it already has a leavening agent in it. Make sure your butter is room temperature, and beat the butter and sugar together until properly creamed.
That's where sugar comes in. Sugar helps to retain water, reduce gluten development and delay starch gelatinization. The setting of the structure of a cake takes place when carbon dioxide production from leavening agents is at its maximum, the gas is held in the air cells of the structure.
Boxed cake mixes tend to be lighter in consistency, but if you're craving that thicker, moister, denser cake, then all you have to do is add an extra egg to your mix. The additional fat in the egg yolk helps create a more tender and moist cake that is full of flavor.
For chemically-leavened cakes — that is, cakes calling for baking powder or baking soda — it's OK if you don't remember to add the eggs until the end. Martina says, “Late in the mixing stage, eggs will incorporate better if you lightly beat them before adding to the batter.
The carbon dioxide bubbles in soda pop act as a leavening agent — the element that makes baked goods rise and makes them light and fluffy. Kitchen staple leaveners — like baking soda and baking powder — use a chemical reaction to create carbon dioxide bubbles.

Those extra 40 calories and 7 grams of sugar are all from added sugars. Fruit co*cktail may seem like a tasty alternative, but buyer beware! Many varieties are packed in heavy or light syrup, plus those cherries often contain artificial colors.
Heavy syrup contains water, corn syrup and sugar, and it has the most calories of the three. A 15-1/4-ounce can of sliced peaches contains about 10 ounces of fruit and 2/3 cup of syrup, which adds about 200 calories. Light syrup is made from water and sugar.
Fruit co*cktail can be packed in natural juices, light syrups, or heavy syrups. The liquid it is packed in makes a big difference in the nutritional content of fruit co*cktail. Of course, natural juices are always best and lowest in calories.
